The short answer

Moisture content describes the water in a rice sample as a percentage of its mass. Sample the batch consistently and record the measurement basis before using a reading to guide milling decisions.

What the reading means

On a wet basis, moisture percentage is water mass divided by total sample mass. The instrument, calibration and sample temperature can matter to interpretation; follow the meter’s instructions.

A reference point, not a universal setting

IRRI describes roughly 13–14% moisture as suitable milling context. Do not use that range as a substitute for crop-specific handling advice, a calibrated measurement or the equipment documentation.

Take a representative sample

Collect subsamples across the batch using an appropriate sampling method. Keep their identities if you are checking variability. A single handful can conceal a nonuniform batch.

When readings differ

Repeat according to the instrument procedure, check material settings and investigate whether the batch is heterogeneous. Do not simply average away a large unexplained difference.

Moisture and mass balance

If water content changes between weighing input and output, a mass difference may partly reflect water. State whether yield figures use as-received weights or a moisture-corrected basis.

Avoid a common shortcut

Do not prescribe rapid wetting of dry grain from a calculator result. Conditioning and drying need a controlled, crop-appropriate process.
